When it comes to desert then ice-cream is one such thing which everyone like to add in their plate. Though the idea of #icecreamcake is not new but i must say that its a very interesting way to serve a desert than just scooping it out as such and pouring some chocolate sauce over it. How can you realise that this recipe can be so simple and interesting unless you give it a try. The best part about this desert is that, it does not require any cooking and you may store it in your freezer for days ahead of your party. This recipe requires only few ingredients and best part is that there is no cooking required.<br />

So the ingredients which i used in making this are:-<br />

<li>Vanilla ice-cream</li>
<li>Cocoa powder</li>
<li>Chocolate chips</li>
<li>Some roasted nuts</li>
<li>Chocolate cake for base</li>
<li>Chocolate slab to garnish (optional) </li>
<li>Silicon mould or cake ring to set the cake</li>

First of all crumble the chocolate cake, i have baked a cake ahead and some was left over so have used that one other wise you can use any chocolate cake available in the market. But if you are using a ready made cake then you need to mix little butter in it as it is usually dry and won't set properly.<br />
<br />
Place a cling film at the bottom of your mould so that taking out your cake becomes easier. Cling film should be cut in a manner so that it come out of the mould sides. You can see the picture below and get an idea how to do it.<br />

Place the crumbled chocolate cake at the bottom by pressing it with hands so that it covers the base well.<br />

Then take vanilla ice-cream and mix ccocoa powder, nuts and chocolate chips in it. give it a good mix so that all ingredients well combine. If you have chocolate ice-cream then you can use it directly but i wanted to get a second flavour with what i was having at home so i tried this idea and it worked well.<br />

Fill the mould with this chocolate mixture ice-cream and set it for some time in your freezer till it gets harden.<br />

Then comes the last layer of plain vanilla ice-cream. Pour the vanilla flavour over the chocolate ice-cream and finally set it in the freezer to set. Cover the top with cling film to avoid any ice getting inside.<br />

If you have an sweet tooth or longing to make something quick for this #Ganeshchaturthi then you are not far anymore. Though i don't celebrate this festival but i always like to cook something special and get a feeling of festivity through my kitchen. Anyways for those who are seriously planning to cook and want an easy recipe, here's for you. I have never realised that making sweet can be so simple until i tried this one myself. It requires few ingredients and only 10-15 minutes of cooking and 5 minutes of cooling time and you are ready to take a bite. It made around 20 pieces for me. The no of pieces may vary depending on the size you cut and also on the size of tray you choose to spread the mixture, if the size of tray is large then you may get thin pieces or vice-versa.<br />

All you need is:-<br />

<ol style="text-align: left;">
<li>Besan/ Bengal gram powder 1 cup</li>
<li>Sugar 2 cups</li>
<li>Ghee 5 tbsp</li>
<li>Water 1 cup</li>
<li>Dry fruits chopped 1/2 cup(coconut, almonds, cashew, sesame seeds)</li>
</ol>
First of all grease a large plate/tray with ghee or oil and keep it aside. This tray will be used for setting the barfi.<br />
Take ghee in a pan or kadhai melt it and add besan in it. Fry the mixture till besan turns a little golden brown in colour and you can smell the nice aroma. While frying you may add the chopped dry fruits so that they also get little roasted. Turns off the stove and keep this besan mixture aside. In another pan take the sugar, add one cup of water to it and stir it continuously till all the sugar is melted and it reaches one thread consistency.<br />
Once the sugar syrup has reached one thread consistency then turn off the stove and add the besan mixture which was kept and stir in continuously till all the ingredients are mixed well.<br />
Then finally spread the mixture on a greased tray and let it set. When the mixture is set cut it into square or diamond shapes whatever you like and enjoy it!<br />

After a long time almost a month i am posting a recipe. Its not that i stopped cooking but i was busy reading a novel kite runner and other cobwebs have kept me occupied. Though this recipe was waiting in my archive long back and it was only me who was reluctant to post it. Now i am back with a peace of mind and full of energy. For now lets look at this one.<br />
#Dumaloo is a very popular dish in northern region of India. Till date i have tasted its two versions one is kashmiri style and the other is punjabi style. The kashmiri version is very rich and aromatic loaded with spices while the other one is tangy with tomato taste. This curry is meant for people who love potatoes, as the name itself suggests dum aloo. Also this dish is hot on every menu card of hotel as well as it is popular in parties and other functions. I have come up with a very simple technique to cook this dish in no time. The ingredients are quite simple which are commonly found in every bodies kitchen. Since my husband is a potato lover so i make this one specially for him.<br />

<li>Cumin seeds/jeera 1 tsp</li>
<li>Turmeric powder 1 tsp</li>
<li>Garam masala 1/2 tsp</li>
<li>Red chilli powder 1/2 tsp</li>
<li>Asafoetida/hing a pinch</li>
<li>Green chilli 1 slit</li>
<li>Salt to taste</li>
<li>2 Tbsp oil</li>
<li>Fresh coriander leafs for garnish</li>

First of all boil the baby potatoes, if you don't get them then you can use large ones and cut them into smaller proportions. Then shallow fry them as it will give them a crispy texture. The original recipe of dum aloo involves deep frying but since i want to cut down on calories so i did shallow frying. You may also skip frying but the crispy taste will be missing in the curry.<br />

Then take oil in a pan add jeera, followed by onion, ginger-garlic paste, asafoetida, red chilli powder, turmeric powder and green chilli. Saute the mixture till it turns little brown in colour.<br />

Puree the tomato and add it in the pan. keep stirring till it start leaving the sides of pan and it will turn brown in colour.<br />

Then add curd in the pan. Beat the curd before adding it so that there are no lumps in it. Keep stirring it till all the ingredients are well incorporated.<br />

Add garam masala and salt to taste then leave the potatoes in the curry and cover with a lid for 5 minutes so that they absorb the masala.<br />

Mango is one of my favourite fruit and off course people who are reading this blog must be having interest in this fruit thats why they are tempted to go through this post. The good thing about this recipe is that they are vegan #mangomuffins and there are no artificial flavour or colours used in it. This mango season i wanted to try as many recipes with mango as possible, so i found one and gave it a try and believe me it came out very well. The muffins had a nice dome on top and rich in natural flavour of mango. One must keep in mind that they must select good quality mangoes as it will be responsible for the overall flavour as no artificial flavour is being used.<br />
The original recipe calls for only refined flour (maida) but to make it nutritious and rich in fibres i have used wheat flour in majority. So it is good for health and low in calories as butter is being skipped and instead canola oil is used.<br />

When cookie word comes in what rolls in your mind? for me it is some thing which i can grab and eat to give instant energy. Well it works good for me as an instant reliever of hunger. Well the recipe which i am sharing requires following ingredients:-<br />

First of all mash the banana in a large bowl. Then add dates, oats, cornflakes, sunflower oil and vanilla extract. Give it a good mix and leave the mixture to stand for 15-20 minutes to firm up a little and for the oats and cornflakes to absorb some of the liquid.<br />

Then take rest of the ingredients and put in a mixer and run the mixer for few seconds till all the things get well incorporated. If you want it to be light then mix additional water. Pour it in a glass and garnish with some chilli flakes and jeera seeds. Or else If you want that a butter should float on the top then run the mixer for longer duration and avoid mixing water as it will keep it thick this way.</div>

This is my second post for a banana cake and what encouraged me were some banana turning black on their skin and i was sure that now no one will eat them. This time i prepared a really large lot and the ingredients are also quite different from the previous banana walnut loaf. Though the original recipe was named as banana square as they cut the cake into squares. I also made squares out of it and it yielded me around twenty four squares. So that was quite a good number if you have a bunch of guest dropping down or you can store it in air tight container to enjoy with your tea, also its taste enhances every day as they age.<br />

Preheat the oven at 180'C or 350'F. Grease and flour rectangular pan 13*9*2 inches or two round 9*1/2 inches pan.<br />

Beat all the ingredients on low speed, scrapping bowl constantly for three minutes. Then beat on high speed for three minutes. When the batter is ready pour it in pan. I added walnut on top of it that part is optional but it compliments the taste.<br />

The recipe which i am discussing today is quite simple but is very famous among all and i am sure that everyone must have tried it once in there lifetime. As a kid it was my favourite and even now its on my top list.<br />

Nankhatai are very famous in north India. They are tea time cookies made with a combination of different flours, ghee, sugar, dry fruits and different flavour. Though i was introduced to it when my marriage was fixed and my mother in law brought it to our place whenever she visited. That was the time when our house was full of these cookies as we could hardly finish one batch and the other fresh stock was ready. After marriage it was only me who was enjoying it through every bite and my husband just use to watch me. He dint ate it as he was allergic to Besan (gram flour), i felt bad but now when i started baking i wanted to come up with a recipe which both of us can enjoy together. So this recipe was there in the manual which i got along with my oven and it came quite well. Now he was asking for more when it was already finished in two days. Cookies doesn't last for long in my house. If they are well baked, then they just disappear in a day or two.<br />
These nankhatai's were made using all purpose flour with rich desi ghee and powder sugar, for the flavour cardamom powder and nutmeg powder was used and there aroma was lingering all around the house which made it difficult to wait till they were baked. I just kept popping my self impatiently in and out of the kitchen just to see whether they were done or not.<br />

It peak summer time with the sun showing no respite. Throats are getting dried up every second and we are just filling our stomach's with water but the thirst is still on. This summer i realised how hot it is when i started walking down all the way to drop Atharv to his daycare, with umbrella in one hand and pushing his stroller from the other hand. So for people like me who have to counter the sun at its peak time i thought i would come up with some summer cooler. For that i decided to add a category of "beat the heat" in which i would be posting recipes to stay cool and some refresher drinks. The first summer cooler which was quite handy and helped me out was Roohabza lassi. Roohabza in itself is very refreshing, may be in a form of milk shake or sharbat it is all time hit. For a hot summer like this when i was planning for lunch i thought its better to start with a refreshing lassi. With a bottle of roohabza always handy in my kitchen i thought i will make it today. It is very easy to make and does not require any preparation. With this recipe you can serve two people and the preparation time is just one minute. So now you can imagine how simple and easy it is.<br />

This recipe is quite awaited lying almost for a year in the archive. Though i wanted to publish it last year but it was my delivery date which kept me away from posting it and after that one can understand how difficult it is to pen down anything when all your attention is needed by a little one. Mango season was almost gone by the time i could even switch over to my blog so there was no point of writing a recipe whose raw material is not available. But it is the peek season for raw mangoes in Bangalore and in north India its about to come in another month or so. I am fortunate that i have a mango tree in my backyard from which i can pluck fresh mangoes anytime and make this delicious side. It is a traditional chutney made in northern India and people call it with different local names. One of the famous one is "aam rus" its a Hindi name of this dish. It is a very sweet and tangy chutney rich in flavour which can be enjoyed along with roti or rice. If kept in refrigerator it goes for a week or so. I have been eating this one when i was small and i have learnt this version from my mom.<br />

Be it a Sunday brunch or a heavy breakfast, aloo pyaz paratha is on the top list. It is one thing which every north Indian likes and have in their routine life's. It is very rich, stuffed with a mixture of aloo pyaz and other aromatic spices. If you are looking for tiffin ideas! then also it works well, both for kids as well as for office going people. It is best enjoyed with a cube of butter on the top which slowly melts with the heat of paratha, a bowl of curd and pickle or a chutney of your choice. I don't know why it took me so long to post this recipe though it is prepared quite frequently in my kitchen. Now when i have started with it, i will be discussing various ways in which they can be prepared. So depending on the time, you can choose the way which best suites you. Since summers are at its peak they also go well with a tumbler of lassi. With lassi i remember that they are best way to beat the heat of summer, so i am planning to post some recipes of lassi's and other yogurt recipes which will help you stay cool this summer.<br />

Aloo pyaz paratha</div>

So first get started with the aloo paratha recipe and lets look at the ingredients used in it.<br />

<li>Boiled potatoes 4(medium size)<div style="text-align: right;">

<li>Chopped onion 2(medium size)</li>
<li>Green chilli chopped 2-3</li>
<li>Fresh coriander leafs chopped</li>

<li>Garam masala 1 tbsp</li>
<li>Cumin seeds 1 tbsp</li>
<li>Oil 2-3 tbsp</li>
<li>Wheat dough (kneaded atta)</li>

Method 1:<br />
<br />
First of all take oil in a pan and heat it. Add cumin seeds and let them crack then add chopped onion saute it till golden brown. After that add green chillies, garam masala and boiled and mashed potatoes. After that add coriander leafs and salt to taste. Mix all the ingredients well to make a smooth paste.<br />
In this way our filling is ready which is stuffed in the atta.<br />

Method 2:<br />
<br />
This one is a much simpler method as it do not involve using oil and cumin seeds. In this method all the ingredients are mixed together to form a paste. Potatoes are mashed and all the ingredients are mixed well in it.<br />
This type of filling will retain the raw taste of onion and freshness of coriander leafs. But the filling prepared with first method is smooth and parathas are much crisp and also they have smooth texture.<br />
<br />
Method 3:<br />
Peel and grate the raw potatoes using a fine grater and mix all the ingredients in it. It gives a very crispy parathas but they are bit difficult to handle as the don't form a sticky filling like the previous methods. In this method you toss the mixture using little oil or you may skip the step and just mix all the ingredients and use the filling.<br />

So you can choose any one of the method to prepare the filling depending upon the time you have.<br />
<br />
After that divide the filling into equal portions, with this ingredients 6-8 parathas can be prepared. Some people like to stuff with a lot of filling while some fill with a little less so that varies from person to person and there is no hard and fast rule for that.<br />

Then take your dough and form small balls out of it. Make a hole in the centre using your thumb large enough to fill it with the mixture or flatten the ball from the sides in a form of roti and and place the filling in the centre.<br />

Then heat the tawa on the gas stove and put the paratha on it. When it is cooked from one side then turn and apply oil and again turn and apply oil on the other side and cook well on both the sides. Usually I don’t prepare it at home but this time I got the recipe in a news

just snatched it and tried to assemble it so that I can get to know what all was
there. As I was planning to make dahi bhalla so thought of trying it too. There
was also recipe of green chutney which I have already posted in my blog. This one was
quite simple and it tasted like the one we get in the market. Proper
consistency and perfect flavour. It
hardly took ten minutes to prepare and yielded about 250ml of it.</div>

First of all take tamarind paste. I had taken ready to use paste
but if you have fresh one then it is best. Then add all the ingredients in it.
In spite of sugar I have used jaggery as
I like its flavour and more over its good for health. Then bring it to a boil
while continuously stirring it till all the things incorporate well. After some time you will notice that it
starts becoming little thick. You can adjust the consistency according to the
need.<br />

If you want to make it more rich add some dry fruits like I
added musk melon seeds. You can add cashew, raisins, dates etc.After it cools down you may store it in a glass jar and even
refrigerate it for later use.</div>

During festivals we want to cook special dishes to serve, as well as enjoy the festival without staying in the kitchen for long time. The recipe which i am sharing today is easy to cook and can be prepared in advance so that you can enjoy the festival and at the same time seduce your taste buds with its sweet and tangy flavour. Dahi bhalla is all time hit in any get together. I mostly keep it in my list and people have always asked me how do you make them so soft. So today i will be sharing this long awaited dish. The best part of dahi bhalla is that it can be taken as starter, or it can be eaten as a chaat or one can include it during lunch or dinner. If we count on the health benefits then i must say that they are loaded with proteins as they are made out of lentils plus yogurt is good for stomach too. There are three key ingredients which together make it complete, they are yogurt, tamarind chutney, bhalla. Each of them play an important role in adding flavour to it plus little spices for dressing it. Bhalla's can be made in advance and you can freeze them in freezer for 2-3 months, and any time some one drops in you can serve them as fresh as they were. Or in case if you want to consume soon just refrigerate in your fridge where it stays for a week or so.<br />
Now lets look at the ingredients to make it.<br />

First of all soak the dals in the above mentioned proportions over night or at least for six hours. Then grind the mixture to form a smooth paste. One can add salt in the mixture at this point of time as it gives nice flavour with every bite.<br />

Then take oil in a pan and heat it, once oil is ready start frying the bhalla's by dropping little quantity of the mixture using a spoon. I usually use a serving spoon to drop the batter so that the size is perfect as we get in the market. Not so small and not too big.<br />

After they turn golden in colour remove them from oil and keep on a kitchen towel to drain the excess oil from it.<br />

For making bhalla chaat take water in a large bowl and dip the bhalla's in them till they become soft. If you are using frozen ones from the freezer then you need to put them in hot water so that they become soft soon, otherwise for fresh ones normal temperature water is ok. Then squeeze the water from them by pressing between your hands and arrange them on the plate in which you want to serve.<br />

I always wanted to try banana and walnut loaf but never had a chance to get the banana ripe to their fullest i.e the pulpy stage when the outer skin turns black and we are usually reluctant to eat it. This time i was lucky that there were two banana left over and no one was eating them. Though Atharv is banana lover in the family but because of cold i was not giving him. So i thought that its a good chance to try out this recipe. Also i wanted to have something for the tea time which is healthy as well as nutritious so i went ahead with it and it came out wonderful beyond my expectations. This tea time cake is guilt free without butter and wheat flour made it fiber rich. Also topping it with walnuts made it very nutritious. I have used egg replacer instead of eggs in it but one can use three eggs in it if they wish to.<br />

Method for preparing it:-<br />
First of all pre heat the oven at 180 C. Sift all the dry ingredients in one bowl ie( wheat flour, baking powder, soda bicarb, cinnamon powder and nutmeg powder) keep them aside.<br />
Then in another bowl pour the oil and add sugar in two to three batches while mixing it with hand mixer.<br />

Grease a 6-inch tin and pour the batter in it. Also you can sprinkle one walnuts on the top of it.<br />

Bake the cake for about 35-40 minutes at 180 C or unless tooth pick comes out clean. For me it took 40 minutes.<br />

When it comes to soups tomato is on the top list and people may agree with me in this regards. I have hardly found anybody saying that i don't like it or i can't have it. Before preparing this soup i wanted to make traditional tomato soup only, but after seeing a bundle of lettuce leafs in my fridge i could not resist to add in. As there was no other way to finish it. Also i wanted to give a twist to the old taste of tomato soup. So went ahead and experimented with it and my husband could not even recognise what all was there in. This is the best way in which we can mix a lot of healthy ingredients which people in there normal life are reluctant to have it. With this recipe you can serve four people. Cooking time was 10 Min's and preparation time was 5 minutes so total time 15 minutes.<br />

For making them first cut the cake slice into four equal squares and also wash the strawberries and cut them longitudinally making about four pieces from each.<br />

For making this i have used dark chocolate as well as white chocolate to coat the strawberries. But you can choose anyone of your choice.<br />
First of all chocolate is melted using a double boiler or you can use microwave oven for this purpose. I used my microwave with power at 50 and time interval of 15 seconds. After every 15 seconds take the bowl out and give your chocolate a stir so that it melts evenly.<br />

I was always facinated by looking at cookies in the cafe shop. But making it my self was a dream until i started experimenting with my new Otg. There was a packet of cornflakes lying in the kitchen since two months as a discarded piece, so i thought why not try out cookies with cornflakes so that it can be used up. To my surprise these cookies were already half gone in a day and i think they won't last for a day or more. So this idea worked out for me and most important was that they were so fulfilling that there was no need for me to prepare breakfast in the morning. In these cookies i have used 50:50 wheat flour and all pourpose flour but one can use either of them or a mix of it in any propotion. Also to make it more tempting i have added chocolate chips in it. This recipe made around 15 medium size cookies and cooking time was around 25- 30 minutes. So lets get started. </div>

Pineapple is a very refreshing fruit filled with its sweet and tangy taste. Though i can have it in any form but this pudding i discovered while having lunch at rajdhani restaurant. Pineapple halwa was served as a sweet dish there and i could not find it out before having a bite of it as it looked like a simple suji ka halwa with a bit yellowish colour. Though it took me a really long time to try it myself as every time pineapple was brought it was finished. This time i was determined to give it a try before it gets disappeared. After experimenting with it i discovered it was quite simple and taste awesome. Altogether a new dish to serve whenever someone arrives. The best part is that semolina has a setting property so one can give it any shape. I have used a pudding mold to present it in a new style so one won't be able to guess what exactly it is.</div>

Eating bitter gourd or karela is not a routine for us but mom and dad loves it so much and i have learnt it from my mom over a period of time. Most of the time while doing grocery i am reluctant to take karela because of there huge size like a bottle gourd, but this time i saw these little cuties well packed in separate packet. The no of karelas in the packet were about 12 -15 but there size was quite small just the bite size So i could not resist and grabbed the packet as few were only left and people were amused to see such a small size of this veggie. Even i saw such a small size for the first time. Though later on i realised that peeling and stuffing such a small size of karela was a really tough task but had a sigh of relief when it was done. I would be discussing traditional stuffing which is mostly done in north India, though there can be a lot of creativity and n no of options for stuffing but this one is very popular. This is prepared mostly in summer season because it requires raw mango which is available in June and July. But in Bangalore i don't have to wait for summers, its almost same through out the year.<br />

Then little frying of the filling is to be done for that take about 2 tbsp of oil in a pan and heat it. Then add jeera, asafoteda, dhania powder, chopped onion and green chili, saute it till golden brown and finally add raw mango, salt, turmeric powder and garam masala. If one is planning to store it for longer time then fry the masala till it become brown in colour and if one is planning to consume it within a day or two then a little frying is ok. The masala which i have prepared is not very dark as i have not fried it for longer duration. There will be tangyness of raw mango in the masala.</div>

Lastly cool the masala and fill all the karela with it, make sure that you don't over fill as the filling may come out while frying. Then take oil in a kadahi and heat it, once the oil is ready deep fry the karela's till they become brown in colour.</div>

The most simplest breakfast and snack idea which i have adopted from south Indian cooking is rawa uttapam. You must be wondering that they look like idlis, yes the size is same as idli but the process is same as of uttapam. How i discovered them has a story attached to it. It was some festive time and guest were about to come, lunch was ready and the rawa batter was prepared, as it was decided to make button idlies for starters but unfortunately the screw of the idli's mould got lost, so quickly i thought that why not make uttapam instead. But guest have already arrived and if i would make the usual size then it won't be possible to serve them at once as a platter. So i thought that if mini size is made then four to five uttapams can be made at the same time and it would be possible to serve each one. Also they looked really cute then our normal size as kids enjoyed them a lot. </div>

The preparation time is 15-20 minutes as we need to soak the rawa and in the mean while vegetables can be cut. The cooking time is less as it takes 2-3 minutes to make a batch a 4-5 uttapam also depending on the size of pan.</div>
Ingredients used are:-<br />

<li>Curd/dahi 1/4 cup</li>
<li>Salt to taste</li>

<li>Fresh coriander to garnish</li>
<li>Oil to fry 2 tbsp</li>
<li>Cashew half cut for garnish</li>
<li>Water</li>

<br />First of all add dahi, salt, garam masala and water to make a smooth paste, not very flowy and keep it aside. In the mean while chopp the vegetables and mix in the batter while keeping some of them for garnishing.<br />
I have used cashew also which is entirely optional.<br />

After that heat the non stick pan or tawa. Spread little oil and using a spoon pour the batter on the tawa or skillet and spread in a circular pattern as shown. The vegetables which were kept for garnishing are now placed on the top of it so that they stick to the wet batter. Let them cook from one side and flip over so that other side can be cooked as well. Also i have sticked the cashew nuts and coriander leafs at this point of time only.</div>

When the masala is ready add the boiled chana. One can see that there is water along with chana, so if you choose to make it dry remove the water and just add chana and if you want gravy then add the water. Bread jam has always been a comfort food for me whether eaten as breakfast or as a snack in the evening. I can have it daily. Though i mostly go for mixed fruit jam but making an apple jam did had some reasons behind. I had a stock of apples lying in the refrigerator which no one was consuming and the other reason was that i wanted to experiment with them. Usually i prepare apple sauce for my kid or give him steamed apple so one day while i was preparing it, i thought to myself that its colour and smell is like a jam and if i further process it and add sugar it may turn into jam. Then i goggled through various pages and found that i was thinking right and it needed two-three ingredients more which are easily found in one's kitchen. I couldn't wait and early morning i took all the apples which were about 1 and 1/2 kg and made jam out of them. Though my husband does not even sniff at jams and my baby is too small to eat it so i think i have to finish the whole lot this time. I was really happy after making jam at home as its texture and smell were perfect as we usually get from the market and the best part was that it was without preservatives. This time my husband seemed interested in eating it and he appreciated that it looks great and confirmed have i prepared it at home?<br />

First of all peel all the apples, dice them and make sure that there is no seed left inside. Then add little water about 1/2 cup and bring them to boil so that they become soft. They start becoming dark in colour as they boil. While they boil, mash them using a masher to form a paste like consistency. One can also grind it in the mixer before boiling it to reduce the manual effort of mashing.</div>
